Fat Bao has been a longtime favorite of ours, and if you’ve ever been, you know why. Since opening their doors in 2012, they’ve been serving up some of Houston’s most craveable bao buns—pillowy soft, perfectly filled, and packed with unique flavors that keep people coming back. We’ve been hooked since our first visit back in 2016, and even now, over a decade later, Fat Bao continues to innovate. Their latest creation? Bao Bowls—and we’re all in.


These new bowls are a genius twist on their classic steamed bao. Think of them as deconstructed versions of your favorite bao, served up in a hearty, build-your-own style bowl that’s perfect for lunch, dinner, or a quick bite when you’re on the go. It’s everything you love about Fat Bao—just a little more filling and fork-friendly.

We kicked things off with the Big Byrd bowl, and let’s just say it lived up to the name. Crispy fried chicken paired with sweet basil and sauce that hits every note—sweet, savory, and just a little spicy. It’s comfort food with a kick. Then we tried the Pork Belly bowl, and it was everything we hoped for: rich, tender braised pork belly balanced out with crunchy cucumber, green onion, and a generous drizzle of hoisin. Simple, but incredibly satisfying.

If you’re a fan of savory and slightly tangy flavors, the Bulgogi bowl is another standout. Marinated beef ribeye, kimchi, and green onion combine for a bold, umami-packed bowl that’s both filling and flavorful. 

While the bao buns will always hold a special place in our hearts, these new bowls are the perfect way to mix things up without straying too far from what Fat Bao does best. It’s proof that after all these years, they’re still listening to their customers, trying new things, and delivering on flavor.
